Few things are as satisfying as a well-made egg salad — creamy, tangy, and simple to throw together with ingredients you almost always have on hand.
Ingredients
1 dozen eggs, hard boiled
1 teaspoon Dijon mustard
1 tablespoon extra virgin olive oil
1/2 bunch cilantro, chopped
1 scallion, chopped
Salt, pepper & mayonnaise (Duke’s is the best!) to taste
Instructions
Chop up eggs, cilantro and scallions
Mix together then add mustard and olive oil
Add salt, pepper and mayo to taste
OPTIONAL: Add dill pickle juice for a extra little zing
Serve with crackers, on a bed of lettuce or some crusty bread
